I think this is why people have the custom of having dumplings <on> New Year’s Eve. I'm not sure whether they are correct and I don't know when to use which. Thank you!

And you would add the "on" too. "My friend wore a beautiful dress on this New Year's night." However it is customary to refer to this years' New Year's celebration as an "eve".
